Vanilla wafers, cream cake, and marshmallow icing

Here’s something I didn’t know about marshmallows: the original form of the treat used the extracted sap of the marshmallow plant. Interestingly mass-market extruded marshmallows weren’t invented until 1948. Any that were available to Lena in the early 1900’s would probably have been hand-made.

Transcription

Vanilla Wafers

Sift 1/2 lb flour with 1/2
teaspoon of B. powder
Stir the yolks of 3 eggs with
1/2 lb of sugar to a cream
add 1 teaspoon of vanilla
the beaten whites and
last stir in flour
Put with a teaspoon small
cakes on a buttered pan
and bake in a moderate
oven

Cream Cake

1 Cup of cream beaten stiff
add 1 cup of sugar
2 eggs beaten lightly
2 cups flour
2 teaspoons baking Powder

Marhsmallow Icing

Boil 1 cup sugar 1/4 cup water until
candied then take off stir and add
11 Marshmallow and beat until ---
