Chicken Salad Boil one chicken until tender When cold remove skin and fat cut the meat into small pieces take twice the quantity of celery + cut in small pieces and mix meat + celery well together Dressing - Three eggs well beaten, 1/2 cup of vinegar 1/2 cup of butter teaspoonful of sugar teaspoon mustard pepper + salt to taste. Put vinegar on to heat add butter pepper + salt when hot pour over the eggs well beaten When thoroughly mixed put on stove + cook until thick (stir all the time while ---- add mustard to the eggs when well beaten When dressing is cool add 1 cup of cream and pour over chicken + celery and mix well Mayonaise Dressing 2 eggs 3 tablespoons sugar 1 teaspoon prepared Mustard pinch of cayenne pepper 1 cup of cream 3/4 cup of butter and 1 cup of vinegar put on to boil then stir in the rest of ingredients and let it boil to thicken keep stirring all the time
