Ginger cookies, dumplings, kuchen and muffins

Kuchen is really just German for “cake.” The first variation seems to build off of the recipe for bread recorded earlier in the book. The second begins from scratch.



Ginger Cookies

1 cup of Sugar
1  "  of Lard + Butter mixed
Beat these to a cream
1     cup of sweet Milk
1 1/2 "   of Molasses
1 tablespoon of ginger
1 1/2 teaspoon of Baking Soda
1 teaspoon of cinnamon
dissolved in a tablespoon
of boiling water
Use enough flour to make
a soft dough.


2 cups flour piece a butter
2 teaspoons baking powder
rub well together and
add milk to make a
soft dough.


To the bread dough add -
1/2 cup of sugar
1 egg
1/2 cup of latl-- + butter.


1 1/2 pt of Milk boiled then let it
cool off add flour yeast sugar
eggs + shortening and make
it stiff at night.


1 egg 1/2 cup of Sugar
1 large tablespoon of butter
1 cup of white flour
2  "   " graham flour
2 teaspoon of baking powder
a little salt enough Milk
to make them like cake
drop in Muffin pans
