Pounded biscuit and pancakes

The biscuit recipe is one of two or three that refers to rubbing lard into flour, usually specifically mentioning using the hands.



Pounded Biscuit

2 qts flour 2 heaping table
spoons of Lard rub well in
the flour salt to taste
flour enough to make a
stiff dough work well and
pound about 10 minutes
Make into biscuits with the
hands and press in the [center?]


1 1/2 pt flour
2 eggs salt butter the size of an egg
1/2 pt milk
1/2 pt flour and 1 1/2 teaspoon
of baking powder.
beat eggs up lightly
