Sponge cake, apple pudding, tapioca pudding, and lemon jelly

Of these four recipes I’d be most likely to try the “apple pudding,” which sounds a lot like an apple strudel or apple crumb bake.

Spong Cake

1 cup sugar
1  "  flour
4 eggs
1 tea spoon baking powder
4 table spoons of water

Apple Pudding

pare + slice apples like for pie
then stir up
1 tablespoon of butter
1/2 cup sugar
1 cup of Milk
1  "  "  flour
1 teaspoon of baking powder
put few pieces of butter in bottom
of baking pan put in apples and
pour batter over bake 1/2 hour.

Tapioca Pudding

Soak 3 tablespoons of Tapioca
1 qt of milk come to boil
3 yolks beated up light with
a little milk let tapioca
boil with the milk +
then put in yolks of eggs,
3 tablespoon of sugar
white of the eggs beat up
with a little sugar.

Lemon Jelly for Cake

1 Cup of Sugar one tablespoon
Corn Starch 1 cup of boiling
water 1 lemon 1 egg
Mix sugar + cornstarch and
put the water lemon juice and
grated rind on to boil When
boiling add the sugar + cornstarch
when smooth add the beaten
egg and cook one minute
spread between cake.
