Ginger cakes

Ginger cakes sounds like a nice idea, but I’m afraid it will take some interpretation and experimenting to figure out what to do here.

Two Cups of Molasses.
One table spoon of Ginger.
Two cups of Sugar. One Egg.
One cup of Lard. melted.
One table spoon full of Soda.
One cup of hot Water
Put ginger in Molasses
put sugar in  "
put soda in cup and pour
hot water over it
take one cup of melted Lard and
put in after 1/2 of flour is put in
and then put in the rest
of the flour and set out to get
cold.

Back ache, gingerbread, and vienna rolls

I don’t know whether “Back Ache” is a home remedy or a cocktail with an evocative name. If you can find some “onion of white joseph lilly” you can whip up a batch and let us know if it seems to help with pain. Given that it starts with a quart of rye whiskey, I think yes, it will help with pain.

The recipe for vienna rolls seems pretty complete, and I’m eager to give it a try.

Back Ache -

1 qt of Rye Whiskey pure
2 cts cinnamon Bark
2 grated Nutmegs
12 cloves with the seed on
5 cts Rock Candy
Take the onion of the White
Joseph Lilly dry it in the
oven and pulverize it
mix with the other and let
it stand about 24 hours
before using.

Gingerbead

3 cups light brown sugar
1/2 cup of lard + butter mixed
1/2 cup of Molasses
1 egg.
3 cups of buttermilk.
1 heaping teaspoon baking soda
spices to suit taste
flour to stiffen like cake dough

Vienna Rolls

Put in a bowl 1 qt. of unsifted
flour 2 heaping teaspoons of
baking powder sift 3 times
add a tablespoon of butter
and rub flour and butter
well through the hands
Into 3/4 pint of milk
dissolve 1 tablespoon of Salt
and then stir into the
flour with a spoon knead
lightly roll out 1/2 inch thick
cut them with a large round
cutter fold over + brush top
with milk to give them a
gloss Bake in hot oven
20 minutes (Excellent)

Mandelschnitten and doughnuts

Mandelschnitten is a popular German almond cookie, with a lot of different variations. In researching it I did not find any others that called for Citron. I also realized I don’t know what Citron is. The doughnut recipe seems deliciously simple and so if you can’t find Citron I suggest starting with that.

1/2 lb chopped Almonds
1/2  " Citron
4 Eggs
1 lb of Powder Sugar
2 or 3 teaspoons Cinnamon
2  " "     "     Cloves
2 teaspoons Baking Powder
flour to stiffen
bake in a Moderate oven

Doughnuts

1 tablespoon butter (even full)
1 cup sugar
1 egg.
1 cup Buttermilk
1/2 teaspoon soda dissolved in
Buttermilk
teaspoon vanilla
flour to stiffen and fry in
a pan of lard.

Devil’s food cake

Devil’s food cake with filling. Lots of brown sugar consumed. Several pages are marked with a large ‘X’ as this one is. I don’t know if that means “very good” or “stay away if you value your teeth.”

Cream tomato soup and Mrs. Sar Louis’ coffee cake

A cream tomato soup that doesn’t seem to have any cream in it, and the coffee cake recipe of Mrs. Sar Louis. This would be Lena R. Sar-Louis (Sarlouis) (nee Betz), wife of Frank M. Sar-Louis.

Cream Tomato Soup

1 can tomatoes
1 pt of Water
1 bay leaf celery cut fine or else
use celery extract peper + salt
put this on to boil well when
boiled enough take off and strain
then put back on stove and add
1 tablespoon cornstarch mixed to
a paste with a little water and
put in tomatoes and let boil
until it thickens then serve.

Coffee Cake (Mrs Sar Louis)

3 tablespoons of lard
3      "      "  sugar
1 egg
1 large cup of Milk
pinch of salt
2 teaspoons of baking powder
3 cups of flour

Coffee cake and ice cream

Great-grandmother Lena’s recipes for two of my favorite things.

Coffee Cake

1 1/2 egg + a little salt
3 tablespoons of sugar
1 tablespoon of butter
1 cup of Milk
3 teaspoon of baking Powder
+ flour to stiffen
this makes 2 large ones.
1/2 egg tablespon of melted
butter for the top + then
sprinkle with sugar.

Ice Cream

3 eggs
cup of sugar

1 pt of cream
vanilla to flavor

Chicken salad and mayonnaise dressing

I initially thought that the second recipe was intended to provide the dressing for the first, but that seems to not be the case.

Transcription

Chicken Salad

Boil one chicken until tender
When cold remove skin and fat
cut the meat into small
pieces take twice the quantity
of celery + cut in small pieces
and mix meat + celery
well together
Dressing - Three eggs well
beaten, 1/2 cup of vinegar
1/2 cup of butter teaspoonful
of sugar teaspoon mustard
pepper + salt to taste.
Put vinegar on to heat add
butter pepper + salt when
hot pour over the eggs well beaten
When thoroughly mixed
put on stove + cook until
thick (stir all the time while ----
add mustard to the eggs
when well beaten When dressing
is cool add 1 cup of cream
and pour over chicken +
celery and mix well

Mayonaise Dressing

2 eggs
3 tablespoons sugar
1 teaspoon prepared Mustard
pinch of cayenne pepper
1 cup of cream
3/4 cup of butter and 1 cup
of vinegar put on to boil
then stir in the rest of
ingredients and let it
boil to thicken keep stirring
all the time
